OUR STORY

A distillery shaped by a city of streets.

Hanoi's Old Quarter is a tangle of thirty-six streets, each once named for the guild that worked there. Silk, silver, bamboo, paper. Today it's all steam, charcoal smoke, plastic stools and the clatter of pots at dusk.

We came back from Southeast Asia wanting to bottle that atmosphere: street food, bia hoi corners, night markets and the quiet precision of cooks who have made one dish for decades.

Old Quarter Distilling was established in February 2024 and runs a copper pot still with an inline gin basket in Moorabbin. We distil small batches, taste constantly, and cut hard.

Hanoi Expression

A gin built around the bowl of pho: warm spice, charred aromatics and fresh herbs, finished with a pale natural green from the herbs themselves.

In the still

Juniper and coriander seed carry the spine. Star anise, cassia, black cardamom and white pepper bring the broth. Charred ginger and shallot sit underneath as depth, not headline.

After the still

Kaffir lime leaf, rau răm and Thai basil are added cold, after distillation, to keep their green, peppery lift intact.

In the glass

Chai-adjacent and savoury-sweet. Neat over ice, with tonic and a lime wedge, or in a Negroni that doesn't quite behave.
